500 ml milk,

80 g dark chocolate,

1 tbsp. l. cocoa powder,

1 cup flour,

2 tbsp. l. butter,

vegetable (for baking) and salt.

Cooking method:

Melt the chocolate in a water bath and pour in 250 ml of warm milk. Whisk the remaining milk with 1 cup of sifted flour, powdered sugar, cocoa powder and salt. Add the eggs, beaten until foamy, and mix. If the dough turns out too liquid, you need to add more flour.
Melt the butter and add to the dough with melted chocolate and rum. Mix thoroughly and leave for 2-3 hours.

Then heat the frying pan and grease it with a small amount of vegetable oil. Pour in 1 ladle of dough and make circular movements with the pan so that it spreads over the entire surface.   • 100 ml boiling water;
  • 1-2 tbsp. granulated sugar;
  • 10 g vanilla sugar;
  • a couple of eggs;
  • 170-180 g flour;
  • 2-3 tbsp. vegetable oil;
  • a pinch of salt;
  • 2-3 tsp. baking soda.

How to cook:

Take a deep bowl and break the eggs into it, add salt to them and stir a little with a fork or whisk. Add granulated sugar and vanilla sugar to the egg mass, beat everything thoroughly until foamy. Pour the sour milk into the mixture, stirring constantly. The consistency should be uniform. Pour baking soda into a bowl and stir. To avoid the taste of soda, first quench it with vinegar. Sift the flour through a sieve and add tablespoons to the mixture. Do not forget to stir the mixture all the time, otherwise lumps will form.

Remove the milk from the refrigerator an hour before cooking; it should be at room temperature.

Heat the vegetable oil in a frying pan or microwave until warm and pour it into the contents of the bowl. Add a little oil to the pan and let it heat up properly. Use a small ladle to scoop out a portion of the batter and pour it into the center of the pan. Swirl to distribute the dough evenly.

Turn the pancake over to the other side after 2 minutes and continue frying for another minute, then you can remove it from the pan. Grease the pancakes with oil as desired and fold them in any way: triangles, tubes, squares. The dough turns out to be porous, and the taste itself is so delicate that it is impossible to stop eating them.

Pancakes with cucumber brine


Did you know that cucumber pickle can not only be drunk, but also added to pancake dough? If not, then try making pancakes yourself or for a holiday table. I suggest making a cheese filling to make the taste creamier.

  • 180-200 ml of cucumber brine;
  • 100-120 ml of clean water;
  • a glass of flour;
  • 2 eggs;
  • ½ tsp. soda;
  • 1 tbsp. granulated sugar;
  • 2-3 tbsp. vegetable oil;
  • 50-70 g hard cheese.

On a note!

The brine left over from salted tomatoes is suitable for the dough.

How to cook:

Break a couple of eggs into a deep cup, add sugar and stir the contents thoroughly. Use a whisk or fork to mix. Beat until foamy. Add warm water and vegetable oil to the eggs and stir again. Now pour in the brine, but first add soda to it so that it quenches.

Add flour little by little to the liquid mixture. Be sure to sift the flour, then the dough will be porous. There is no need to add salt due to the brine. Grease the frying pan with lard or oil. You only need to grease once, this amount will be enough for the entire frying.

When the pan is hot, pour in the batter and bake the pancakes until golden brown on both sides.


Grind the cheese on a coarse grater. If you like softer varieties, you can take “Russian”, “Dutch”, “Gouda”.


Spread the cheese shavings on the pancake, and then form an envelope so that all the edges meet in the center.

  • 480-500 ml kefir 2.5%;
  • 230-250 ml hot water;
  • a couple of eggs;
  • 2 tbsp. Sahara;
  • ½ tsp. salt;
  • ½ tsp. baking soda;
  • 3-4 tbsp. sunflower oil;
  • 220-240 g flour.

How to cook:

First, combine the eggs with sugar and salt in a deep bowl. Take a whisk and beat the mixture into a light foam. Add kefir, mix the ingredients until smooth. Pour hot water into another cup and add baking soda. Pour boiling water into the dough in a thin stream, stir the dough. Thanks to this technique, those very holes in the dough are created. At the penultimate stage, pour vegetable oil into the dough and mix everything again.


The final stage is adding flour. It should be free of lumps, sift it in advance. Add it to the kefir mass and stir. The consistency should resemble liquid sour cream. Heat the pan, pour a little dough into the center and spread. Fry the pancakes over medium heat until the sides begin to brown.


When the pancake is fried on both sides, remove it from the frying pan onto a separate plate.

First you need to prepare the orange. To do this, grate the zest from it and squeeze the juice into a separate plate. If you took too large a fruit, then half is enough. Melt the butter in the microwave, pour it into a bowl with the remaining ingredients, add vegetable oil. Now add flour to the liquid mixture, but not all, but only half. Preparation

Combine flour, salt and soda with granulated sugar, mix the ingredients together.

Use cold boiled water. Slowly pour it into the flour in a thin stream, stirring immediately with a fork or a kitchen whisk. Do this vigorously so that the flour does not have time to set into lumps. You can adjust the thickness to your liking by adding water to make the dough more fluid.

At the last stage, pour in vegetable oil, mix everything again and you can start baking pancakes.

They are prepared without yeast, so they won’t take much time. In the evening we came home from work, quickly brought out the pancake mixture and not only for Maslenitsa, but any day for dinner there was a soft and tender yummy on the table. This option is most often used in making pancake cakes.

Ingredients:

  • whey – 800 ml;
  • granulated sugar – 60-70 g;
  • coarse salt – ¼ teaspoon;
  • wheat flour – 380-400 g;
  • chicken eggs – 2-3 pieces;
  • sunflower oil (for dough) – 30-40 ml.

Preparation

Pour the whey into a deep bowl (the whey should be at room temperature, you can even warm it up a little). Taste it right away, if it is sour, then this sourness will be felt in the pancakes, so adjust the taste with granulated sugar, you will have to add a little more of it. Break the eggs into the same bowl, add regular sugar (if you want, you can add vanilla to your liking), and add salt. Using a mixer or kitchen whisk, beat everything until smooth.

Add flour in small parts, continuing to knead the pancake mixture. Do this until you achieve a homogeneous consistency without a single lump. Pour the oil into the prepared pancake mixture, stir again and let the dough sit for about 15-20 minutes. After this you can bake.

Kefir pancakes without eggs


They turn out to be openwork, with a hole, have elasticity and are best suited for stuffing with fillings. You can use milk instead of water, the pancakes will turn out even tastier.

Ingredients:

  • white flour – 230-240 g;
  • kefir – 0.4 l;
  • drinking water – 1 glass;
  • coarse salt and baking soda - half a teaspoon each;
  • granulated sugar – 30-40 g;
  • sunflower oil (for dough) – 20-30 ml.

Preparation

Pour baking soda, granulated sugar and salt into a bowl with kefir, stir until the bulk ingredients are completely dissolved. Never use fermented milk product directly from the refrigerator; take it out in advance so that it warms up at room temperature. Gradually add flour, gently kneading the dough.

Boil water and pour almost boiling water into the pancake mixture. Immediately pour in the vegetable oil, mix everything thoroughly again and you can start frying the pancakes.

It is difficult to find a housewife in Russia who would not bake pancakes and pancakes for Maslenitsa. Real Russian pancakes are made from yeast dough; the dough for them was made overnight and baked in cast iron frying pans. Not everyone can bake thin, lacy pancakes, despite the apparent simplicity of the process. This simple matter has its own subtleties:

  1. The first trick when baking pancakes for Maslenitsa is to always sift the flour before kneading the dough. This is especially important for yeast pancakes. Then the dough will rise much better.

  • 1 liter of milk
  • 500 g flour
  • 2 eggs
  • small packet of dry yeast

Place the dough in a warm place for 40 minutes. It should rise by 2 times. While the dough is rising, separate the yolks from the whites of the eggs. Grind the yolks with salt and vegetable oil, and beat the whites with a mixer into a strong foam.

Add the rest of the flour and yolks to the dough and let the dough rise again. Then add the whites and mix gently. If necessary, add flour.

Bake pancakes for Maslenitsa in a preheated frying pan on both sides. Grease with butter.

  • flour - 300 g,
  • milk - 3 glasses
  • eggs - 2-3 pcs,
  • butter - 3-4 tablespoons,

  • salt - 1 teaspoon

Pour warm water into a bowl, add sugar (1 teaspoon) and stir. Crumble the yeast into a bowl and stir well until the yeast is completely dissolved. Gradually add flour sifted through a sieve (1 cup) and mix well. Cover the bowl with the dough with a napkin or towel and place in a warm place.

Melt the butter or margarine and cool slightly (the butter should not be hot so as not to burn the yeast). Grind the egg yolks with sugar. Add the yolks, mashed with sugar, salt, butter (margarine or vegetable oil can be used) to the suitable dough - stir well.

Then add sifted flour and milk into the dough in small portions, alternately: adding 0.5 cups of flour and pouring in half a cup of milk. Each time you add flour, you need to stir the dough well, and then pour in the milk and mix well again - so that no lumps form in the dough. Thus add the remaining flour and milk. Cover the dough with a towel and place it in a warm place again.

When the dough rises, you need to stir it and let it rise again. When the dough rises again, add the whites beaten with salt, mix gently and let the dough rise again. Do not stir the risen dough any more, but immediately bake the pancakes, lifting the dough with a ladle from the bottom to the very top.

  • one and a half cups of flour
  • 3 eggs
  • half a glass of milk
  • 2 tbsp. spoons of sugar
  • 100 g vegetable oil

Beat eggs with salt, sugar and sour cream. Add this mixture to the flour and knead thoroughly. If the dough turns out thick, dilute it with warm milk. Fry pancakes in a well-heated frying pan.

Pancake recipe for Maslenitsa 5 - Pancakes with seasoning

  • wheat flour - 600g
  • sugar - 1 tbsp. l.
  • butter - 5 tsp.
  • egg - 1 pc.
  • yeast - 25g
  • salt - 1 tsp.
  • milk - 4 cups
  • vegetable oil - 3-4 tbsp. l. Any vegetables and fruits are suitable for baking (onions, zucchini, apples, pumpkin)

Dissolve yeast in 3 glasses of warm milk (30-35C), add 1/2 tbsp. spoons of sugar, salt, mashed yolk and melted butter, mix and add half the amount of flour (it is advisable to sift the flour through a sieve so that it is enriched with oxygen). Knead the dough. Cover the bowl with the dough with a towel and place in a warm place for 1.5-2 hours until the dough rises. When the dough has risen (increases 2-3 times), add the remaining milk, heated to 50C, flour and sugar. Then pour in the whipped egg white. Mix everything and put it in a warm place again for about 3 hours. After the specified period, you can bake pancakes, but do not mix the dough.

Pour less dough into a heated, oiled frying pan than usual. When the pancake is slightly browned, place the baked mixture on it and pour in a new portion of dough so that the baked mixture ends up between two pancakes. Then the pancake is turned over to the other side and fried.

Pancake recipe for Maslenitsa 6 - Custard pancakes with kefir

  • kefir (preferably at least 3.2% fat) - 500 ml,
  • eggs - 2 pcs,
  • flour - 300 g (about 3 faceted glasses to the risk),
  • salt - 0.5 teaspoon,
  • sugar - 0.5 teaspoon,
  • soda - 0.5 teaspoon,
  • vegetable oil - 3-4 tablespoons

Pour kefir into the pan, add eggs (you can lightly beat the eggs first), salt and sugar. Stir until smooth. Place the pan on the fire and heat, stirring constantly, to a temperature of ~60 degrees. Remove the pan from the heat and add the sifted flour until the dough has the consistency of pancakes.

Dilute soda in a glass of boiling water and stir. Pour boiling water into the dough, stirring constantly. Pour vegetable oil into the dough and mix again. Let the finished dough stand for ~30-40 minutes.

To bake pancakes, heat a cast iron frying pan well and grease it (using half a peeled onion or potato) with vegetable oil. Pour about 1 ladle of dough into a hot frying pan (the amount of dough for one pancake will depend on the diameter of the frying pan). Quickly spread the dough over the entire surface of the pan, shaking it in weight. Bake until the pancake begins to dry out around the edges (it should brown on the bottom). Stir before frying. Fry pancakes in a lightly oiled frying pan.

To prepare the filling, cut the fish and sprinkle with lemon juice. Combine sour cream, chopped dill, salmon, mix until smooth. Serve with both cold and hot pancakes.

Serve with jam, honey, sour cream or various fillings: meat, fish, cottage cheese.

Pancake recipe for Maslenitsa 12 - Royal wheat pancakes

  • flour - 6 cups
  • milk - 600 ml
  • yeast - 50 g
  • eggs - 6 pcs.
  • butter - 200g
  • whipped cream - 300g
  • salt and sugar to taste

Place the dough: dilute the yeast in milk, add 3 cups of flour. When the dough rises, add the yolks mashed with butter and stir. Then add the remaining flour, salt and sugar to taste into the mixture, stir again and place in a warm place for 45-60 minutes.   • wheat flour - 400 gr
  • water - 500 ml
  • egg - 2 pcs
  • salt - 0.5 tsp.

  • 1-2 eggs

  • 100 g butter margarine

For filling:

  • 5-7 medium sized apples
  • 2-3 tbsp. l. sugar for sprinkling

Beat the eggs, combine with kefir or curdled milk, add salt, sugar, vegetable oil, flour and knead a fluffy, light, semi-thick dough. Pour the pancake batter into a hot greased frying pan, on the surface of which quickly and as nicely as possible lay out neatly chopped apple slices, meanwhile the bottom layer of pancakes will fry, after which turn the pancakes over with the apples down and brown them. In essence, it all comes down to ordinary matchmaking, during which families treat each other to pancakes.

WEDNESDAY – “Gourmand”

On this day, housewives bake mountains of pancakes with all their might, treating their households and guests to them. According to the beliefs of our great-grandfathers, it is on Wednesday that you can enjoy your pancakes. Also on the third day of Maslenitsa sons-in-law go to visit mother-in-law for treats. Moreover, it is imperative to eat everything that your mother-in-law prepares for you, otherwise winter will be outside the window for a long time. Also on this day, the mother-in-law shows her affection for her son-in-law by the way she set the table.

THURSDAY – “ROLL UP”

This day is a time of true abundance, when the tables should be full of food and drinks. The fourth day, according to tradition, was the most fun day in the ceremonial farewell to winter. It marks the beginning of a wide celebration, when people stopped any work and devoted all their time to games, fun and other fun. Another important tradition on this Maslenitsa day was sleigh rides “in the sun.” By riding horses around the village, always in a clockwise direction, the participants of the holiday thereby helped the sun to drive away winter.

FRIDAY – “Mother-in-Law’s Gathering”

This day is celebrated in the same way as “Gourmet”, but exactly the opposite. On this day Mother-in-law goes to visit her son-in-law for pancakes. It was customary to spend such a day only with family and close friends. It’s interesting that the son-in-law had to not only invite his mother-in-law to visit and treat her to pancakes, but also prepare the delicacies with his own hands. And she was supposed to give good advice about family life.

SATURDAY – “SISTER-IN-LAW’S GET-OUT”

Following the mother-in-law's come "mother-in-law's get-togethers." According to tradition, on this day all the village residents gathered in the main square and solemnly set fire to the effigy. This ritual meant farewell to winter until next year. Also on this day, married girls should give gifts to their sisters-in-law (husband’s sisters) and have bachelorette parties, and, accordingly, come to them with pancakes.

"FORGIVEN SUNDAY"

And finally, the last day of Maslenitsa is Forgiveness Sunday. It got its name because traditionally on this day it is customary to ask for forgiveness from relatives and friends for insults spoken against them. This is exactly where you should start the day - ask each other for forgiveness for the offenses caused and after that treat the person you asked for forgiveness to pancakes. This action is sealed with a threefold kiss on the cheeks. On the last day before Lent, people tried to eat as much as possible, went to the cemetery, and remembered relatives.
